There’s so much goodness in this salad your body will absolutely love you.I was in Lanzarote for a little break in December and went to a lovely restaurant in the Puerto Del Carmen mall where I got a salmon & prawn salad and loved it so much so decided to try and recreate it. What was interesting was that they put green apple into it and it worked an absolute treat, the fresh sweet apple balances out the kale and smoked salmon perfectly; drizzled with a cider vinegar and lime vinaigrette you have a super salad.
For the base I used a mixture of boiled cabbage, boiled kale an uncooked kale for a variety of texture. Of course you can switch these up to your favourite green such as spinach or lettuce.
For colour and a few more vegetables, I added thinly sliced radishes and of course chopped up green apple. I then topped the salad with smoked salmon and a sprinkle of pine nuts.
- 3 tsp Extra Virgin Olive Oil
- 2 tsp Cider Vinegar
- 1tsp White Wine Vinegar
- Juice of half a lime
- Salt and pepper to taste
This salad is such an exciting mix of tastes and textures compared to your average lettuce and tomato salad. It can be changed up to add more or less of certain food groups ( for example grilled chicken instead of salmon for more protein, or quinoa).
